Yogurt Pesto Tahini Dressing
3 ingredients is all it takes to make a crazy good dressing! This stuff is perfect for dipping vegetables, pouring on a salad or dressing up a wrap or sandwich.
I love to use this for making gyros. Try it on my Smoked Pork Wraps for an almost gyro experience!
I use Greek yogurt but regular yogurt will work too. Just keep in mind that it will have a thinner consistency and less protein.
There is so much goodness in this dressing too! It's something you can really feel great about serving and eating.
I used my own home made Garlic Scape Pesto for this batch. I look forward to having this around every summer. The scapes are only available from mid-June to early July in my garden so I preserve some of them by making this pesto and it keeps for quite a while if we don't eat it all up in a week.

If you don't have any scapes on hand just make this recipe with 5 to 8 cloves of garlic and add a few more basil and parsley leaves.

Of course, I'm sure there are excellent pesto's available in your market if you don't have the time to make your own.
If you happen to have some Greek yogurt, jarred pesto and tahini in your pantry, you can whip up some of this in 5 minutes for a delicious accompaniment to many meals. It even makes a great chip dip! Try it with some Pita chips.
Just mix the three ingredients together and use immediately or store for up to 1 week in an airtight container in the refrigerator. Done and done!
