Super Fast Garlic Red Chard
This recipe is so fast it's almost instant and what beautiful color! You need this to brighten up your plate. Not only is it sooooo good for you, it's really tasty too.
Take a beautiful large bunch of beautiful red chard and fold each of the leaves in half, top sides together, so you can easily trim out the largest part of the stem. Pile up the trimmed leaves and then roll them together like a fat cigar. Slice the cigar shape every 1/2 inch or so to make gorgeous pinwheels of the red and green leaves.
Saute them for about 5 minutes with lots of minced garlic, chili flakes and some chicken stock, season with a pinch of kosher salt and fresh ground pepper and you will have a colorful tasty side dish that goes with almost anything.
I love to serve this alongside meats, especially pork. It's also a nice compliment to creamy polenta or as an ingredient in a healthy bowl recipe.

My husband and I like them spicy so I use some hot chili flakes. The natural alkalinity of the greens that's released as you chew them calms the initial heat you get when you take a bite. This makes it a fun dish if you like to spice things up.

Ingredients
1 bunch red chard, stems removed and chopped
3-4 cloves garlic, minced
a pinch or more of red chili flakes
2 tablespoons grape seed or canola oil
1/4 cup chicken stock
Kosher salt
fresh ground black pepper
Method
Heat a skillet to medium heat then add the oil, garlic, chili flakes and red chard.
Saute 1 minute then add the chicken stock and continue to saute for 3 minutes.
Season with salt and pepper, mix well and saute for 1 more minute then remove from the heat so it doesn't wilt too much. I little firm is better.
Serve immediately.
