Japanese Cucumber Salad
Delicious, light and tasty, Japanese cucumber salad is a sushi bar favorite! It's a lovely appetizer and palate cleanser we can't do without. This is such a simple salad and quick to make. It's easy to do at home anytime you like.
Of course it's wonderful with other Japanese dishes but this salad also pairs well with any comfort food, providing an occasional refreshing palate cleanser, as well as alongside a great American barbecue meal.
We have a great sushi restaurant we like to go to called Kobe Hibachi Sushi and a friend who also frequents there asked if I knew how to make their amazing cucumber salad. He thought it would be great to see my recipe on The Glass Pantry A Food Adventure.

How could I resist? Everyone should know how to make this at home because it's so good!
This 4 ingredient recipe comes together in about 5 minutes and then needs to marinate for at least 15 minutes before serving. That gives the cucumber time to release some of it's liquid into the rice vinegar and for the sugar to fully dissolve.

That's all there is to it, simple, healthy and yummy.

Japanese Cucumber Salad
Ingredients
1 large cucumber peeled and sliced
3 tablespoons seasoned rice vinegar
1 tablespoon white sugar
1 teaspoon sesame seeds
Method
Mix all ingredients together and allow to marinate in the refrigerator for at least 15 minutes before serving.
